Looking for a santoku knife that’s a cut above the rest?

The **Miyabi 5000MCD Santoku 18 cm** comes from the Zwilling J.A. Henckels factory in Seki, Japan. Striking are the ergonomically shaped handle with Masur birch D-shape and the beautiful drawing of damask steel on the blade.

 ## Rock-solid Mc63 powder steel with 100 layers of damascus

 The core of the blade consists of MC63 powder steel. This micro carbide steel has been hardened to a temperature of-196 degrees Celsius with the help of the Cryodur ice-hardening technique, which improves the crystal structure of the blade, which makes the knife even harder. A hardness of 63 HRC is achieved so that the knife retains its sharpness for an extremely long time.

 No less than one hundred layers of damask steel have been forged around this MC63 core. Due to this special treatment, every blade has its own unique flower pattern in the shape of damask. Moreover, using the traditional Japanese Honbazuke method of sharpening, the blade is razor-sharp. This means that the knife reaches the ultimate sharpness in three sharpening phases. First, the blade is flattened horizontally and sharpened on a rotating grindstone. This is followed by a vertical sharpening phase on the same stone, followed by the polishing phase, where the knife gets the "finishing touch" on a leather strap.

 ## The handle of Masur birchwood

 The D-shaped handle is made of Masur birchwood. This wood has a beautiful natural mark and makes every knife unique. A mosaic pin is placed in the middle of the handle. Another stunning detail that emphasizes the perfection and superior finish of this series. The warmth of the natural wood also contrasts nicely with the damask steel blade. And as the star attraction, the Miyabi logo is beautifully engraved on the back of the handle.

Ich habe dieses Miyabi MCD 5000 Messer letzte Woche bestellt, es kam sehr schnell an, aber das war das einzig positive daran. 

Angekommen ist ein bereits beschädigtes Produkt in einer massiv deformierten Originalverpackung. Die äußere Versandbox war unbeschädigt, was klar zeigt, dass das Messer schon vor dem Versand beschädigt war.
So etwas darf bei einem Premiumprodukt dieser Preisklasse schlicht nicht passieren.

Ich habe den Schaden sofort gemeldet, warte aber nun seit zwei Tagen ohne jegliche Rückmeldung. Bei einem offensichtlichen Gewährleistungsfall erwarte ich eine schnelle und professionelle Lösung, insbesondere eine umgehende Ersatzlieferung sowie ein Rücksendelabel.

Bis jetzt bin ich sehr enttäuscht von der Abwicklung. Ich hoffe, dass dieses Anliegen unverzüglich bearbeitet wird.

Niks op aan te merken. Ligt perfect in de hand. Iets zwaarder dan de fijne Japanse messen, maar daardoor ook robuuster. 

Hab mir mal ein optisch wunderschönes Santoku zugelegt. Es ist überraschend leicht und mega wertig! Sicher bekommt man für den Preis auch andere sehr gute Messer. Aber der Preis war ok. Ich nutze es vorrangig für Sushi, Fisch und Gemüse. Es ist super scharf und sehr dünn. Also kaum Widerstand beim schneiden. Arbeitet sich wirklich hervorragend damit. Versand war flott, Verpackung sehr gut und preislich unter vielen anderen Händlern.  Es macht einfach was es verspricht. Hab den empfohlenen Keramikstein Dazu geholt und bin echt begeistert. Schleift sich fantastisch damit. Das Messer wird damit Rasiermesserscharf. Bin begeistert.

My husband was delighted with his Xmas present, he read all about it, admired the craftsmanship and showed it off to everyone who visited. He subsequently put it back in its box and declared it too good to use. 
Unbeknownst to him I have been using it almost daily and am loving it. I’m even considering buying him another one in the range for his birthday!!

Het metaal is schitterend, glanzend en met mooie Damast lagen.
Perfecte balans, heel mooi afgewerkt, ook bij de overgang van lemmet en handgreep. De handgreep is fijn, en het berkenhout heeft een prachtige tekening. De snede is vlijmscherp. Gaat zonder enkele druk door tomaat heen en produceert flinterdunne plakjes.
Het mes is duur, ja, maar dat mag ook voor deze kwaliteit.
